Meatless Monday Meal Ideas

Many people believe the mantra “Meatless Monday” was started for vegetarians, however, that is not the case.  Meatless Monday, an international movement, encourages people everywhere to cut meat one day a week for personal and planetary health.  Even if you’re a meat eater, going veggie once a week can be a good thing for you and also for our planet.
